With the motto of popularising Value Added Products (VAPs) from underexploited fruits and to add their value and utility, the idea of the handbook on star fruit was born. The “Hand book on star fruit” (ISBN No: 978-81-954428-0-5) contains a comprehensive study of the fruit Carambola aka Star fruit. The book has information on various recipes on star fruit adopted and improvised by the students of the department including jam, jelly, tart and pickle. It also contains a comprehensive study of the carambola tree, it’s cultivation practices, harvesting and processing of fruit. The book is expected to give a first hand information on the star fruit, its medicinal and marketing values. In connection to this, a mini-project on “Value addition of underexploited fruits – Averrhoa carambola, was conducted by SFST and the participants were also trained in developing various value added products from the fruit.
This book is published with an intention to inspire the farming as well as the food manufacturing communities to take up more food and farm projects related to the cultivation of startfruit and for the development of more value added items from this underutilised but nutritious fruit.
